According to a study published in the Journal of Nutrition, avocado oil can significantly increase your body’s absorption of carotenoids. Avocado oil is packed with carotenoids and unsaturated fatty acids, the ideal blend for high bioavailability of nutrients. Researchers found that when salads were dressed with avocado oil, absorption of the carotenoids alpha-carotene, beta-carotene and lutein increased by as much as 15 times compared to salads without avocado oil. AVOCADO OIL IS HIGH IN ANTIOXIDANTS
Avocados are among the top five foods highest in vitamin E, and avocado oil retains this important vitamin. Research indicates that vitamin E may help strengthen heart health, lower your risk for Alzheimer’s disease, protect against breast and prostate cancers, prevent the progression of age-related macular degeneration, and support the immune and digestive systems.
Vitamin E is just one of the protective antioxidants found in avocado oil. It also has vitamin K, vitamin C, folate, vitamins B5 and B6, and the master antioxidant glutathione, which boosts cellular energy and strengthens the immune system.
Avocado oil is also highly concentrated with minerals: potassium, manganese, iron, phosphorus and zinc. Chlorophyll is another component of avocado oil, a natural source of the mineral magnesium. At the heart of every chlorophyll molecule is a magnesium ion that is released upon contact with an acidic environment such as the human body. The incomplete chlorophyll molecule then lures in toxic metal ions such as mercury and lead to fill in the hole left by the magnesium ion.
